The Kai Shun Tim Mälzer knives combine KAI’s renowned Damascus layered construction with an ultra-tough VG-MAX steel core. Each blade is hand-hammered using the traditional Japanese Tsuchime technique, which not only enhances sharpness and visual appeal but also helps prevent food from sticking to the blade. Encased in 32 layers of rust-resistant Damascus steel, the blade boasts a remarkable hardness of 61 ± 1 HRC, ensuring long-lasting sharpness. The handle, crafted from rich brown walnut, offers a comfortable and balanced grip for both left- and right-handed users.
